Meat and dairy produce are abundant, and butter, rather than olive oil, is used in Lombard cuisine. Risotto here is simmered in butter with onion, then cooked slowly with stock added bit by bit. Local cheeses, ranging from the parmesan-like Grana Padana to the creamy cow’s-milk cheeses, appear on every menu, either enriching pastas and risottos or served on a platter with fresh bread and olive oil. Fresh herbs and vegetables, such as porcini mushrooms, artichokes, red chicory and asparagus, are key ingredients, grown in abundance and used with fish, meat, risotto and pasta. Milan has the biggest fish market in Italy, ensuring a wide variety of freshwater fish and seafood.
